Reaching the halfway mark of Veganuary I thought i’d better share one of my favourite breakfast recipes thats completely vegan. This a tasty and fulling recipe - and an excellent way to add greens to you morning routine.

Ingredients

  • 100g zucchini 
  • 30g oats
  • 200ml almond milk
  • 1 teaspoon coconut oil
  • 1 scoop vegan vanilla whey (I use @neat_nutrition)
  • 1 teaspoon FSC linseeds 
  • 1 teaspoon chia seeds
  • berries, seeds and nuts to add on top

Method

  • Grate the zucchini into a saucepan. 
  • Add the oats and almond milk. 
  • Bring to a slow simmer - stirring continuously. 
  • Once it’s reached a creamy consistency and the coconut oil and stir. 
  • Take off the heat and stir in the vegan whey. 
  • Sprinkle linseeds and chia seeds on top. 
  • Add any other toppings you would like
