Weekly Tip: Shakshuka

A low carb - full of goodness - warming - comforting - delicious breakfast.
Ingredients
- 4 Eggs
- 1 tin chopped tomatoes
- 1 tablespoon Olive oil
- 1 red onion
- 1 red pepper
- 1 green pepper
- 2 cloves garlic
- 1 tsp paprika
- 1/2 teaspoon ground cumin
- Pinch of salt
- 1/2 teaspoon pepper
- 100g Feta ( or as much as you like)
Method
Start by dicing the onion, pepper and garlic. Heat the olive oil in a pan and then add the onion and pepper - cook until soft. Add the garlic, tinned tomato, paprika, cumin, salt and pepper and bring to a simmer. Once the mixture is bubbling away make 4 little wells with a spoon. Crack the eggs into the wells. Put a lid on and leave to cook until the egg whites are set. Sprinkle feta on top and serve.
