These delicious bars are packed with goodness and an excellent afternoon pick me up snack!

Ingredients

  • 2 cups mixed nuts and seeds
  • 1/2 cup desiccated coconut
  • 1 cup FSC linseeds
  • 1 cup melted coconut oil
  • Pinch of himalayan rock salt
  • 6 drops stevia extract

For the topping

  • 1/2 cup coconut oil
  • 1/2 cup raw cacao
  • Organic honey - sweeten to taste.

Method

  • Soak the mixed nuts and seeds for a few hours to soften.
  • Add to a food processor with the rest of the ingredients and blend.
  • Press into a baking tray and put in the deep freeze to harden.
  • Whilst thats setting, start with the chocolate topping.
  • Melt in coconut oil and raw cacao in a pan, add as much honey as you like, tasting until you are happy with the sweetness.
  • Pour the chocolate mixture over the set nut and seed mix and put back in the deep freeze for 30minutes.
Raw Nut & Seed bars

I added some chopped almonds to the top for extra crunch.
Once they are set you can chop them up into bars or blocks. I recommend keeping them in the fridge, especially if you live somewhere hot like me.
