Weekly Tip: Raw Nut & Seed bars

These delicious bars are packed with goodness and an excellent afternoon pick me up snack!
Ingredients
- 2 cups mixed nuts and seeds
- 1/2 cup desiccated coconut
- 1 cup FSC linseeds
- 1 cup melted coconut oil
- Pinch of himalayan rock salt
- 6 drops stevia extract
For the topping
- 1/2 cup coconut oil
- 1/2 cup raw cacao
- Organic honey - sweeten to taste.
Method
- Soak the mixed nuts and seeds for a few hours to soften.
- Add to a food processor with the rest of the ingredients and blend.
- Press into a baking tray and put in the deep freeze to harden.
- Whilst thats setting, start with the chocolate topping.
- Melt in coconut oil and raw cacao in a pan, add as much honey as you like, tasting until you are happy with the sweetness.
- Pour the chocolate mixture over the set nut and seed mix and put back in the deep freeze for 30minutes.

I added some chopped almonds to the top for extra crunch.
Once they are set you can chop them up into bars or blocks. I recommend keeping them in the fridge, especially if you live somewhere hot like me.
