I had a friend come visit last week who introduced me to this. This is not my own recipe - it’s mostly a @hemsleyhemsley recipe (I say mostly because I unfortunately don't have the book and made it from memory so there is a chance it’s not exactly the same.) 

I wasn't sold on the thought of it - I couldn’t imagine how butternut would be porridge and not a soup. But once i tasted it, I was hooked! It’s an excellent way to get one of your 5 a day in, its also great if you are trying to avoid grains.

Perfect for cold England weather. Give it a try - you will be pleasantly surprised!

Ingredients

  • 1/2 Butternut - peeled and chopped up (or whole butternut if you are making for two)
  • 1 teaspoon cinnamon
  • 1 tablespoon nut butter 
  • 1 pinch of salt
  • 1 teaspoon coconut oil
  • 1 drop vanilla bean paste

 Method

Boil or steam the butternut until soft. Once soft - add to a blender (I used a nutribullet) @nutribulletuk Add a couple of tablespoons of the water the butternut was cooked in and blend.
It should be quite a thick consistency. Scoop/pour into a bowl. Add the rest of the ingredients and stir.

If this doesn't warm you up on a cold winter morning - I don't know what will.
