If you are wanting to enjoy pancake day - but have a healthier guilt free option try this recipe below.  High in protein and flour free.

Ingredients

  • 2 scoops vanilla whey
  • 2 eggs
  • 1/2 cup oats
  • 1 tablespoon FSC linseeds
  • 1/2 teaspoon cinnamon 
  • 1/2 teaspoon baking powder

Method 

Add all ingredients to a blender. I used a nutribullet. Blend until it reaches a smooth consistency.

Heat up a teaspoon of coconut oil (or use a really good non stick pan) Pour the size pancake you want into a pan and cook until you start seeing bubbles forming on the edge of the pancake and then turn over.

Once cooked you can add whatever you want to the top of the pancakes. I added greek yoghurt with vanilla bean paste and a drop of maple syrup.
